ducks Ducks Return To North Star LodgeDonald and Daisy, North Star Lodge’s resident Mallard Ducks, magically appeared back at the North Star Lodge pond without their twelve ducklings.  We fear the worst for them however; our resident bird expert tells us they will probably work on another batch right away.  If this is the case then we will try to find a way to transport them to a safe pond nearby.

We can’t help ourselves, we’re nurturers by nature!

Survivor Care Plans provide a way for patients and physicians to communicate and plan for the future.  It isn’t as simple as one might think however; we are one step ahead with the new ARIA and Equicare data systems coming on board in November.  Anyone out there want to share their experiences in the planning process?

LifeBio 101 – Autobiography Classes Return
May 9 – June 27, 2012
Wednesdays 1 pm – 3 pm

Sue Karstetter, Psy.D., retired Yakima School District psychologist/counselor and Heritage University professor, will guide groups of people in writing their life stories, an engaging and therapeutic process. Photographs are often incorporated into the written product, and each participant may elect to have a short video interview as well. Class sessions will include group sharing about life decisions, people who have shaped you, historic events, childhood memories, your life’s work, health and body, spirituality, values, goals, aspirations, and death. Classes will end with a celebration/reception. LifeBio is used in 84 health-based communities throughout the U.S., including hospitals and long-term living facilities. Bruce McDonnell Memorial Golf Classic

The annual Bruce McDonnell Golf Tournament will be held at the Apple Tree Golf Course on Saturday June 2. For the past seven years, the McDonnell clan of children, grandchildren, great grandchildren and friends have come together to honor husband and father, George McDonnell, and son and brother, Bruce McDonnell by organizing a golf tournament (scramble) each year in June.
They have donated over $100,000 toward the McDonnell Emergency Fund at North Star Lodge, which helps patients with travel, medications and basic living needs while in treatment. This year the McDonnells have created an endowment to ensure that these needs are met in perpetuity. Entry fees include a player gift and dinner following the tournament.

The Annual Bruce McDonnell Golf Tournament will be held at the Apple Tree Golf Course on June 2, 2012.  For the past seven years, the McDonnell clan of children, grandchildren, great grandchildren and friends have come together to honor husband and father, George McDonnell, and son and brother, Bruce McDonnell by organizing a very successful golf tournament (scramble) each year in June.  They have donated over $100,000 toward the McDonnell Patient Emergency Fund, which helps patients with travel, medications and basic living needs while in treatment.  This year the McDonnells have created an endowment to ensure that these needs are met in perpetuity.  Player registration is $110.  These fees include a nice player gift and dinner following the tournament.  Registration forms are available at North Star Lodge or at bmcdgolfclassic.com.

Red and Orange Foods

This week we are highlighting phytochemicals in red and orange foods.

Carotenoids (such as beta carotene and lycopene)- Found in red and orange fruits and vegetables including carrots, cooked tomatoes, sweet potatoes, apricots, cantaloupe, oranges and watermelon. These may inhibit cancer cell growth, work as antioxidants and improve immune response.
Flavonoids (such as anthocyanins and quercetin)- Found in apples and citrus fruits and may help reduce inflammation and tumor growth.
Polyphynols (such as ellagic acid)- Found in citrus fruits and apples and may prevent cancer formation, prevent inflammation and work as antioxidants.
Terpenes (such as perillyl alcohol and limonene)-Found in cherries and citrus fruit peel and may protect cells from becoming cancerous, slow cancer cell growth, strengthen immune function, limit production of cancer-related hormones, fight viruses, and work as antioxidants.

Orange-Pineapple Smoothie

1 banana
2 cups pineapple chunks packed in juice and drained
1 cup orange juice
1/4 cup nonfat milk
2 Tbsp. honey
4-5 ice cubes

Place all ingredients in blender and puree until smooth.
Makes 2 servings. Per serving: 292 calories, 0 g. total fat (0 g. saturated fat), 73 g. carbohydrates, 4 g. protein, 4 g. dietary fiber, 20 mg. sodium.

Old-Fashioned Tomato Soup

1 Tbsp. butter
1 onion, finely chopped
2 large garlic cloves, chopped
1 can (28-oz.) diced tomatoes
1 Tbsp. sugar
1 tsp. dried thyme
1/8 tsp. ground mace
Pinch of cayenne pepper
1/2 cup fat-free half-and-half cream
Salt and freshly ground black pepper
3 Tbsp. snipped dill, for garnish (optional)

Melt the butter in a small Dutch oven over medium-high heat. Sauté the onion until translucent, 4 minutes. Add the garlic and sauté until the onions are golden, 5 to 6 minutes. Add the tomatoes with their juices, the sugar, thyme, mace and cayenne. Bring to a boil, cover, and simmer the soup until the tomatoes and onion are soft, about 15 minutes.

Let the soup sit 20 minutes, uncovered. Transfer it to a blender (or use an immersion blender) and reduce the mixture to a purée, either pulpy or completely smooth, as desired. Blend in the half-and-half. Season the soup to taste with salt and pepper.

Serve the soup hot, sprinkling one-fourth of the dill over each bowl, if using.

Makes 4 servings. Per serving: 105 calories, 3 g. total fat (2 g. saturated fat), 18 g. carbohydrate, 3 g. protein, less than 1 g. dietary fiber, 586 m

Purple and Blue Foods. Purple and Blue Food Recipes

This week we are highlighting phytochemicals in purple and blue foods.

Anthocyanins – Found in eggplants, blueberries, blackberries, prunes, plums, beets, purple cabbage, and pomegranates. Anthocyanins appear to have beneficial effects against cancer, diabetes, heart disease, inflammation, and neurological diseases.
Resveratrol – Found in red wine, grapes, purple grape juice, peanuts, and some berries. This polyphenol prevents cancer formation and acts as an antioxidant.
Ellagic Acid – Found in blackberries, raspberries, pomegranates, strawberries, cranberries, and walnuts. Ellagic acid appears to act as an antioxidant, deactivate carcinogens, and slow cancer growth.

Very Berry Whole-Wheat Bread Pudding

• 1 cup frozen or fresh cherries (tart or sweet), pitted
• 1 cup fresh or frozen blueberries
• 1/4 cup sugar
• 1 tsp. ground cinnamon
• 5 oz. fresh whole-wheat bread, cubed (about 3 cups)
• 2 eggs
• 3/4 cup low-fat milk
• 1/2 tsp. vanilla extract
• 1/4 tsp. salt
• Canola oil cooking spray
• Topping:
• 1 oz. sliced almonds
• 1 tsp. powdered sugar, garnish

Combine cherries, berries, sugar and cinnamon in mixing bowl. Stir well to coat berries; add bread cubes. In another bowl, whisk together eggs, milk, vanilla and salt. Pour egg/milk mixture over berry/bread mixture and stir to coat bread thoroughly. Let mixture stand for 15 to 30 minutes to enable ingredients to combine and the bread to soak up the egg mixture.
Preheat oven to 325 degrees. Spray a 9-inch baking dish. Pour pudding mixture into baking dish. Bake 20 minutes. Remove from oven and evenly distribute almonds over pudding. Return to oven and continue baking until pudding starts to set, about 25 to 30 minutes. Remove from oven and let rest for 10 minutes. Garnish with powdered sugar. Serve warm.

Optional fruit sauce topping
1 lb. bag frozen unsweetened mixed berries
1/2 tsp. cornstarch
Thaw berries; save drained juice and mix with cornstarch. Cook berries over medium-low heat for about 3 minutes. Add juice mixture to berries and heat until thickened. Serve over or alongside pudding.
Makes 6 servings. Per serving: 183 calories, 5 g total fat (1g saturated fat), 27 g carbohydrate, 8 g protein, 3.5 g dietary fiber, 248 mg sodium.

Blueberry and Red Onion Compote
• 1 Tbsp. unsalted sweet butter
• 1 Tbsp. canola oil
• 2 large red onions, halved vertically, and cut crosswise in 1/4-inch slices
• 2 Tbsp. light brown sugar
• 1 Tbsp. balsamic vinegar
• 1 cup water
• Pinch of salt
• 1/2 cup blueberries, fresh or frozen
In a heavy, deep saucepan over medium heat, melt the butter with the oil. Stir in the onions. Cook until the onions are wilted, about 5 minutes, stirring often. Mix in the sugar and vinegar. Cook, stirring until the sugar dissolves, about 1 minute. Add 1 cup of water and the salt. Cook until most of the water has evaporated and the onions are simmering in thick, bubbly syrup, about 25 minutes. Add the blueberries. Cook further until the compote thickens to the consistency of jam, about 20 minutes. Cool to room temperature before serving.
Makes 2 cups (6 servings). Per serving: 84 calories, 4 g total fat (1 g. saturated fat), 11 g carbohydrate, 0 g protein, 1 g dietary fiber, 53 mg sodium.

Yakima’s River Ridge Hosts 48 Hour Golf Tournament

River Ridge Golf Tournament to benefit cancer care fund at North Star Lodge.
This 48-hour tournament features a lighted course, glowing golf balls, tropical themed music, food, games and a spectacular Tiki Bar on the 5th hole. The event kicks off on July 27 at noon followed by the Twilight Tiki at 9 pm, three different playing times on Saturday, and a big couple’s tournament on Sunday for the finish.
